So. This is me. I'm a full time student, I work weekends, I have minimal time to shop, and I am REAAALLLLLYYYYYYY bad at cooking for one. But, as of this year, I have to cook for one.
I don't have a working freezer, and I get bored with food really easily. So, I can have leftovers for one, maybe two meals. I'm not a huge eater. I don't like wasting food. I'm not worried about my weight, and most of the 'eating for one' websites I've found are focused on weight loss, or low carb, or low fat or some other low/diet/restriction. I don't eat red meat, mainly because I don't like the smell of it cooking, or the taste of it. I eat chicken, fish, and bacon. I eat minimal dairy, and while I try to eat my 5 vegetables and 2 pieces of fruit a day, if I don't, I'm not fussed. I rarely eat breakfast - I prefer sleep more than food in the morning. I can't face food within about 2 hours of waking up. I often eat two small dinners to make up for the lack of breakfast.
I grew in in a family that is Polish on my Dad's side, and Mum is one of four children. Food is important. I like eating well. My family shows love through food. I like to eat.
This blog is aiming to document what I am eating, and hope it helps some other single people with their cooking for one.
